Following an 11.8 point and 6.2 rebound season as a freshman, Gafford declared he would not be entering the 2018 NBA draft but would instead return to Arkansas for his second year.

Gafford was selected to the SEC All-Freshman team following his first year of play. Following his sophomore campaign, on March 18, 2019, it was revealed that Gafford would forego participating in the 2019 National Invitation Tournament in order to get ready for the 2019 NBA draft.

In his sophomore season at Arkansas, Gafford saw an increase in his stats, finishing with an average of 16.9 points, 8.6 rebounds, and 1.9 blocks per game. He was selected for the First Team All-SEC and the 2019 SEC All-Defensive Team.

The Chicago Bulls selected Gafford with the 38th overall pick in the 2019 NBA Draft. The Chicago Bulls announced that Gafford had signed on July 8, 2019.

In his NBA debut on October 26, 2019, Gafford contributed a rebound off the bench during an 84-108 loss to the Toronto Raptors. On the first night of the NBA G League season, he was paired with the Windy City Bulls.
