While Guthrie isn't either anti or low carb when it comes to her diet, she does have a unique trick when it comes to eating them. Guthrie explains to Marie Claire, "I'm not anti-carbs; I just try to do my carbs early in the day, so by the end of the day, I try to be carb-free."

Guthrie tells Marie Claire that when she indulges she likes to do it on weekends after work. "On Friday and Saturday nights, I eat and drink anything I want. I don't think you can do this job or parenthood without caffeine, a little wine, and dessert."

Guthrie says that she loves going to a fitness class in New York City, not just for the exercise, but for the nostalgia it brings her. "I do a class in New York called Bari. It's a hybrid of old-school Jane Fonda–type aerobics—because, in the '90s, I was an aerobics instructor."

While covering the 2021 Tokyo Olympics for NBC, Guthrie made sure to work out. She posted a video of herself doing exercises in her hotel room. Guthrie captioned the video, "As far as I'm concerned step aerobics never went out of style. Hotel room workout in Tokyo since we can't go outside or use the gym."

In May 2020, at the height of the pandemic, Guthrie did a Today Show segment with yoga expert Adriene Mishler, demonstrating yoga poses you could do at home. Guthrie revealed that she'd been doing yoga during the pandemic, about 100 days.
